Stateless vs Stateful DHCP - best practices?

We're deep into planning out our IPv6 implementation and we've been discussing DHCP, the pros and cons of Stateless and Stateful DHCP, and trying to figure out the best method to implement.

My server guy wants to do Stateless wherever possible. I certainly see the value to that and it would make DHCP a lot easier, but I have some concerns. Even though I'm the Networking/Cisco guy, I use the Windows DHCP server console and logs frequently for various purposes and I'd hate to lose those.

Does anybody have any recommendations or are there any "Best Practices" guides to implementing DHCP in IPv6? Is there a way to do DHCP logging for IPv6 Stateless DHCP like there is with IPv4?

I was searching the web and IPv6 GRE seems to be rather new feature, available from kernel 3.7.x and newer
so I upgraded to 3.9.11, compiled ip6_gre module that I was able to load but unfortunately there seems to be no userspace tool that could benefit from it and configure it
